Chickpea and Chocolate chip protein cookies…


It has been a while but FOOD TO DIE FOR is back and better than ever!

With summer just around the corner, we are in full beach body preparation mode! Smashing the TRIB3 session will definitely help this but we also need to watch what we are eating. The hardest time is when the sweet tooth creeps in and the cravings get going.

We have a solution for you, a nice health snack that will feel like you are having a nice treat…Chickpea protein cookies!

 These instructions below are for 16 cookies and contain 130 calories, 1g saturated fat and 4.7g sugar!

 First, you will need the following: 400g canned chickpeas (drained), 1 tbsp rapeseed oil, 1 heaped tbsp almond butter (or any nut / seed butter) 60g honey, 40g protein powder (we advise vanilla!!), 1 medium egg, ½ tsp of baking powder, ½ tbsp of vanilla extract, ½ tsp of cinnamon, 140g of oats, 40g of walnut pieces and 40g of chocolate chips.


Now you are ready to go…


Pre heat the oven to 180 degrees. In a food processor blend the chickpeas, rapeseed oil, nut butter, honey, protein powder, egg, baking powder, vanilla extract and cinnamon until completely smooth.

Spoon the mixture into a large bowl and add the oats and walnut pieces. Mix well with a wooden spoon or get stuck in with your hands!! You will need the mix to be sticky and wet.

Use either a silicon baking mat or a lightly greased sheet of baking paper. Divide the divine mixture into 16 golf-ball sized balls and flatten the dough onto the paper. Add your chocolate chips on top (about 4 – 5 chips per cookie, unless no one is watching!!) and press the chips into the dough.

Bake in the oven at 180 degrees for 10 – 12 minutes then leave to cool and then DEVOUR!!
